Ingredients
- 1 tsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, crushed
- 2 medium carrots, finely diced
- 1 tsp ginger, grated
- ½ tsp ground turmeric
- ½ tsp ground paprika
- ½ tsp cumin
- ½ tsp ground coriander
- Salt and pepper
- 1 cup red lentils, rinsed
- 2 cups vegetable stock
- 1 cup water
- 3 cups cauliflower florets
- ½ cup Greek yoghurt
Method
- Heat oil in a saucepan. Add onion, garlic, ginger and carrot and fry until soft.
- Stir through spices and seasoning and cook for a further minute.
- Add the lentils, stock, water, and cauliflower. Bring to the boil and the reduce heat and simmer for 30 minutes.
- Remove from heat and stir through yoghurt.
- Garnish with fresh coriander and serve with crusty bread.
