Cauliflower and Carrot Dahl Soup Recipe 2

It is soup season. Chilly weather is made so much better with a hearty bowl of nourishing soup.

Ingredients

  • 1 tsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, crushed
  • 2 medium carrots, finely diced
  • 1 tsp ginger, grated
  • ½ tsp ground turmeric
  • ½ tsp ground paprika
  • ½ tsp cumin
  • ½ tsp ground coriander
  • Salt and pepper
  • 1 cup red lentils, rinsed
  • 2 cups vegetable stock
  • 1 cup water
  • 3 cups cauliflower florets
  • ½ cup Greek yoghurt

Method

  1. Heat oil in a saucepan. Add onion, garlic, ginger and carrot and fry until soft.
  2. Stir through spices and seasoning and cook for a further minute.
  3. Add the lentils, stock, water, and cauliflower. Bring to the boil and the reduce heat and simmer for 30 minutes.
  4. Remove from heat and stir through yoghurt.
  5. Garnish with fresh coriander and serve with crusty bread.
